When South Florida entrepreneurs Leslie Kaplan and Carolyn Shulevitz wanted to take the mess out of homemade cupcakes, they launched Ready.Set.Cupcake! – frozen, no-mix cake batter and buttercream frosting packaged in thaw-and-squeeze pastry bags. When they wanted to take the gluten out of cupcakes, they formulated gluten-free, dairy-free, vegan chocolate cake batter.
Kaplan is a graduate of Florida International University’s School of Hospitality Management and former manager of Carrousel Yacht, and Shulevitz is a professional chef and graduate of the Culinary Institute of America in Hyde Park, N.Y. Combining their talents they developed formulas for chocolate and vanilla batters and buttercreams without preservatives, trans-fat or hydrogenated oils. There are no bowls to clean up – you just squeeze the batter from the pastry bag into muffin cups and pipe the frosting onto the cooled cupcakes.
The gluten-free batter idea grew out of their experience with food sensitivities in their own children. Kaplan’s son Jared, now 14, suffered for years with stomach problems, joint pain and “brain fog,” but she said his health and focus improved when she eliminated the wheat protein from his diet.
Kaplan and Shulevitz, who call their company The Piping Gourmets, plan to launch two more certified gluten-free, dairy-free, vegan products to their line – vanilla Ready.Set.Cupcake! batter and frozen thaw-and-serve whoopie pies.
