Here’s a refreshing craft cocktail from Dune restaurant, inside the Auberge Beach Residences & Spa. “The Sea Empress gets its name from the shipwreck off Fort Lauderdale’s coast,” says Matthew Thomas, assistant general manager of Dune. “It is a great cocktail for bourbon lovers who like something a little unique. The IPA syrup is made using a local beer from Wynwood. It adds a nice complexity to the cocktail.
“For at-home cocktailers, making the IPA syrup is a breeze,” he adds, “just mix 12 ounces your favorite IPA with a cup of sugar in a saucepan over low heat. Reduce by about one-quarter and there you have it.”
SEA EMPRESS
Ingredients:
2 oz Woodinville Bourbon
1 oz Campari
½ oz Zirbenz Pine Liqueur
½ oz IPA Syrup
1 sprig Fresh Rosemary
Method: Build all ingredients in a mixing glass. Stir roughly 50 times. Strain over a large ice cube, and garnish with a sprig of rosemary.
